Camllo Coghina is a work of food writing. Its recipes, headnotes and articles are published for general information, cultural interest and the pleasure of cooking. They document one way of preparing traditional Sardinian dishes, tested in a home kitchen, and nothing on the site should be read as more than that.
Nothing here constitutes nutritional, dietary or medical advice, and nothing here should be used as a substitute for guidance from a qualified professional. Our editorial preference for cooking with olive oil, lard and butter instead of vegetable oil is a culinary tradition of the region we write about, not a health claim or a recommendation about what any person should eat. Readers with medical conditions, dietary restrictions or any question about how a way of eating fits their circumstances should consult a doctor or registered dietitian.
Cooking is not laboratory work. Ovens run hot and cold, pans conduct differently, ingredients vary by season and by shop, and two cooks following the same page will produce two different dinners. Times, temperatures and yields given in our recipes are honest reports of what happened in our kitchen and are offered as guidance, not as promises of your result.
Recipes on this site involve common allergens, including wheat and gluten, dairy, eggs, fish, shellfish and pork. Ingredient lists describe what a traditional preparation contains; they are not allergy warnings. Anyone cooking for a person with an allergy or intolerance should verify every ingredient, including anything substituted, against that person's needs.
Several recipes here involve raw meat, live shellfish and hot fat. Follow sound food safety practice: buy from reputable sources, keep cold things cold, cook proteins to safe internal temperatures, discard shellfish that do not open, and treat a pot of hot lard with the respect it demands. You alone are responsible for safe practice in your own kitchen.
We work to keep every recipe and article accurate and test what we publish. Even so, errors can slip through, and the culinary record itself often disagrees from village to village. We make no warranty that the content is complete, current or error free, and we welcome corrections from readers who know these dishes well.
Camllo Coghina may display third party advertising, which is how the site pays for itself. Advertisements are the speech of the advertiser, not of this kitchen. We do not review, endorse or vouch for products or services promoted in ads served on our pages, and any transaction you enter with an advertiser is between you and them.
